½ tsp | lime juice | |
6 oz | cream cheese | |
11/3 cups | confectioner's sugar | |
1 tsp | butter | |
3 tsp | mango juice | |
1 tsp | vanilla | |
METHOD: |
1. Preheat oven to 375°F(190°C).
2. Grease a 15 x 10 x 1 inch baking pan and line with parchment paper. Grease and flour the paper.
3. In a large bowl, beat eggs and white sugar until light and fluffy.
4. Add mango puree, lime zest and juice. Mix well.
5. Fold in flour, cinnamon and baking soda. S
6. Spread batter evenly in the pan. S
7. Sprinkle walnuts evenly over the batter.
8. Bake for 15 minutes or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with confectioner's sugar. peel off paper and roll cake up in the towel, starting with the short end.
FillingMix confectioner's sugar, vanilla, butter, mango juice and cream cheese together until smooth. Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving. Dust with additional confectioners' sugar if desired.
